A relaxed, intimate setting complements the rich, savory fare of one of Sheridan’s finest restaurants. Under the creative genius of Chef, Matt Wallop, Oliver’s Bar & Grill opened in January 2002 and has established itself as a Wyoming hotspot for incredible meals served with incredible atmosphere.

After graduating from the Western Culinary Institute in Portland, Oregon, Wallop honed his skills in several Seattle fine-dining establishments. As his experience, talent, and passion for the culinary arts grew, Wallop was ready for his next life chapter. In 1996, Matt moved back to his hometown of Sheridan and took over the well-established, Ciao Bistro. The bistro rapidly gained a superior reputation and outgrew its small 29-seat capacity. Wallop knew what he had to do, and he welcomed the dawn of 2002 with his new restaurant, Oliver’s Bar & Grill.

Situated on Main Street in a corner building featuring expansive windows, Oliver’s beckons passerby to stop and enjoy a savory meal. The dining room’s lighting system and muted colors provide the ideal backdrop for a meal highlighted by intense flavor, fine presentation, and good company. Each meal emphasizes the freshest ingredients, and Wallop draws upon worldly culinary accents in creating his masterpieces. Wallop emphasizes Asian and Mediterranean influences in his dishes, occasionally spicing things up with a West or Southwest kick. He prides himself on buying ingredients directly from the source, with fresh seafood arriving weekly from a Seattle supplier and prime beef purchased from the area’s Legacy Cattle Company.

Immerse yourself in tantalizing aromas and sample one of Oliver’s delectable appetizers as Wallop and his trained staff work their magic on the meal of your choice. Satisfy your taste buds with a fresh salad featuring the bright colors of spring and summer produce. Let the Moroccan flavor of colorful Dungeness crab cakes melt in your mouth. Sink your teeth into a tender rib-eye steak stacked with perfectly crisp onion rings, or select from any of the other fine dishes Oliver’s proudly offers. Taking full advantage of seasonal ingredients, Wallop changes the restaurant menu correspondingly and utilizes a variety of herbs and spices to further enhance each meal’s unique taste and texture. A full selection of wines complement menu items, and decadent desserts like espresso crème brulee, cheesecake, and heavenly chocolate cake add the crowning touch to some of Sheridan’s finest cuisine.

Adjoining Oliver’s, the Brundage Street Gourmet is Wallop’s latest creation and is quickly rising to the occasion as Wyoming’s best little wine shop. Wallop’s store features over 300 wine labels from around the world, along with cheeses, coffees, breads, olive oils, vinegars, and several other specialty items.
